Dinner last night was a treat from our friends, so we got to enjoy a nice evening out with friends for free. We went to a restaurant with plenty of vegetarian and vegan offerings, along with other healthy meat-based entrees, so there was plenty to choose from for all of us.

Dinner tonight was pizza along with some fresh produce, and since the oven's already hot DD and I made some chocolate chip cookies too (they're in the oven as I type).

Tomorrow night is soup and some baked potatoes. I'm trying to use up fresh things before we go out of town for the holiday. I wonder if I could make oven fries and then freeze them. I bet I could, and I'll have an extra potato or two to deal with.

    I like to do this with extra potatoes:

    Idea 1: Bake'm. Cut in half through the middle. Then take the inside while still warm and mash it up with some milk, cream cheese, cottage cheese sour cream, cheddar, bacon (not all of the above, whatever you have works)),a bit of onion, season to taste etc. then restuff and freeze in halfs. These re great. Just nuke to reheat.

    Idea2: Make scalloped potatoes (in oven or crock pot) then dish out into single servings and freeze.

    Dang, now I'm hungry, LOL

    Free food you don't have to cook is always good. Double cooked potatos are yummy but higher in calories!WinkSmile

    my family makes potato cakes with leftover mashed potatoes; you could probably mash up the 1 or 2 you have left and do the same. add sauteed onion to mashed potatoes, allow to cool enough to be able to handle them. pat out into hamburger sized patties and freeze. when ready to use, thaw the patties and then fry in a little bit of butter until the outside starts to get crispy and golden. good with soup, stew, breakfast, or just on on a plate with a fork! Big Grin
